Couverture chocolate is a type of chocolate used to make truffles, bonbons, pastries, and other confections. Unlike regular chocolate, couverture chocolate contains a higher content of cocoa butter, melt faster, easier to work with, gives the final chocolate a glossier shinny finish after tempered.
