Please register early, course only offered once or twice a year, seats are limited!

All courses are hands-on and everything learned can easily be re-created at home. Some courses are 4 hours long and others are 2 days back to back, 4 hours each. While some course do not require prior experience at our school, some others do. Please come dressed accordingly for kitchen work (casual dress and solid, closed toe shoes). Seasonal & Special / Course 1 - The Art of French Macarons

Price: $165.00 (plus 5% tax) / 3.5 – 4 hour course

The thought of making French Macarons could strike fear in many hearts. So much has been said about the failures but in this class, you will be led to success the first time you make them. These very special and tricky little morsels have 2 main components, the pastry and the fillings, and making them successfully requires learning proper techniques. You will work on various flavours, colors, and fillings and you’ll realize that the variety is endless.

We will be working on the following macarons, however, depending on the seasonal items, the course outline could change slightly.

  • Vanilla Macaron with Salted Caramel Filling
  • Pistachio Macaron with Pistachio Butter Creme Filling
  • Chocolate Macaron with Chocolate Ganache
  • Strawberry Macaron with Strawberry Chocolate Ganache
  • Coffee Macaron with Coffee Butter Creme Filling
  • Lemon Macaron with Lemon Custard Filling
  • Coconut Macaron with Milk Chocolate Coconut Filling
  • Italian Amaretti Macaron

This course is a combination of both hands-on experience and demonstrations. It is a great introduction to our Pastry Training Centre and to the European Pastry series. No prior pastry or baking experience is required but it would come in handy. The course is 4 hours long and each student will leave with a selection of macarons. Bring cake boxes to carry your creations home.

 

Seasonal & Special / Course 2 - The Art of French Eclairs

“Éclair” is surely a word that quickly catches the attention of curious eyes and sparks the appetit of fellow “gourmands”. Join us for our 4 hours intensive and informative hands-on course to learn about and to create a selection of different modern Éclairs. You will learn all the ins and outs about making a successful ‘Pate a Choux’ and the proper piping of its Éclair shape.

Various custards, crèmes, jellies, glazes, toppings and decorations will be prepared in class to create four modern looking, and very tasty  Éclairs.

  • Chocolate Éclair – Valhrona Chocolate Custard, Curried Butter Crumble, Chocolate Fondant Glaze
  • Citrus Éclair – Gingered Citrus Custard, Honeyed Italian Meringue, Candied Lemon Zest

Seasonal & Special / Course 3 - Tradition & Modern – German Baking & Christmas Goodies

Once a year special - 5 days (30 hours) of an introduction to baking and it's technique portrayed in traditional and modern interpretation of well known German classics with a seasonal Christmas twist.

On 17-21/December, 2018 from 10:00-14:00

This is a fast-paced pastry course and some serious baking experiences are required and strongly recommended. If you happen to be an novice baker with none or limited experiences then The Pastry Training Certificate Program would be more suitable. As with all of our courses, we focus on the development of hand-skills and our courses are very hands-on. Students need to be reasonable fit and enthusiastic about working with their hands. Please come prepared for kitchen-work, solid none slip shoes, long pants and some serious cake boxes to haul your Torten, Kuchen & Gebaeck home.

Seasonal & Special / Course 4 - Summer preserves, Jams, Marmalades & Jellies

Summer is fleeting and so are the local fruits that it brings. After eating your fill of fresh fruit and even turning some into delightful desserts, you wonder what else you can do to save the goodness and flavour of your fruits. This course was designed to help you preserve your summer fruits for later consumption. We will explain the differences among jam, marmalade, chutney, fruit butter, and jelly. You’ll properly sterilize the canning equipment and understand the different acidity levels of each fruit. You will then be shown how to create your own gorgeous jars of sweet and tangy preserved fruit. Take them home to enjoy now or save them for months to come.

Seasonal & Special / Course 5 - Amazing Italian Tiramisu

Price: $165.00 (plus 5% tax) / 4 hours course

Join us for our new special pastry course – Italian Tiramisu, no pre-requisite required but some previous baking experience will be an advantage.
Tired of knock-off Tiramisu versions? Learn with us how to make all from scratch an amazingly light and tasty authentic Tiramisu. Of course also include freshly-made sponge fingers, coffee syrup and the assembly of the Tiramisu with a light mascarpone creme ( containers from the Tiramisu are provided).
To turn your Tiramisu into the perfect dessert we will also whip up some caramelized pecan nut Biscotti’s and demonstrate how to make Pistachio Gelato.
Solid, kitchen-friendly shoes, long pants, apron and kitchen towels are required for this course.

Germany, same as all European countries has a long tradition of their tortes, kuchen (cakes) and pastries. In a world dominated by amazing French influenced pastries, it’s easy to forget regional pastry specialities. In this popular course, we will teach you several classic famous German Cakes:

This is a back-to-back course and the second part of this course will continue the next day at the same time. Recipes, all the tools and ingredients, coffee & tea and some light snacks are provided. The only thing you need to bring in is 2 pc of kitchen towels, an apron and a box or bags to take your breads back home.

Who doesn't love a beautiful looking and great tasting cupcake...In this specialty course we will teach you the proper way of mixing and baking a light cupcake, as well as making great tasting fillings and frostings. The real joy will come from decorating them into little pieces of edible art.

 

Seasonal & Special / Course 9 - The Art of Roulade Reinvented

Price: $265.00 (+tax)

Old world roulades, under appreciated and partially forgotten are brought back to life in our "Roulades Reinvented Pastry Training Course".

Students will learn important techniques such as sponge and meringue making and how to turn the old style pastry roulade into something festive, modern and delicate which surely will impress. No pre-requisite is required for attending this Pastry Course but previous baking experience is an advantage in this hands-on and fast paced course. Students are required to bring at least 2 tea/kitchen towels not smaller then 16" x 12" dimensions. This is a back-to-back course and the second part of this course will continue on the next day at the same time. This is also a hands-on course and your desserts can be either consumed in class or taken home for your enjoyment. Bring cake boxes on both days to carry your creations home.

We will be working on the following desserts, however, depending on the season, the course outline could change slightly:

  • Cardinal Roulade, with raspberry creme and minted fresh raspberries
  • Lemon Chiffon Sponge, with vanilla creme and fresh strawberries
  • Pear Charlotte Sponge Roulade, with grenadine poached pears

Seasonal & Special / Course 10 - Mastering French Soufflés

Intimidated by Soufflés, planning to impress your dinner party?
Join us for our special pastry course - Mastering French Soufflés, no pre-requisite required but some previous baking experience will be an advantage. Seats are limited, please register early!

Heads-up! Four different soufflés will be covered, all are pumped up with meringues which of course are whipped by hand! Feel free to bring your own (regular sized) ramekins if eating 4 soufflés during the course sounds too much of a challenge, otherwise a good-sized container is essential to bring your (by then collapsed) soufflés home.
